Summer Steak Salad
This substantial salad features some of the best flavors of summer, including grilled steak, cord and nectarines. Placed atop fresh greens and topped with creamy ranch, it’s hearty, filling and fresh.

Ingredients
- 1 lb. beef shoulder steaks
- 1 tbsp. Schnucks canola oil
- 4 ears corn, husked
- 2 nectarines, halved and pitted
- 4 cups baby greens
- 1/2 red onion, thinly sliced
- 1 medium heirloom tomato, sliced
- 1 avocado, sliced
- 1/2 cup Parmesan ranch dressing
- 1/4 cup Schnucks shaved Parmesan cheese
Instructions
- Preheat an outdoor grill to medium-high. Brush steaks with oil and, if desired, season with salt and pepper. Grill until internal temperature reaches 135 degrees, 4–5 minutes per side for medium-rare. Remove from heat.
- Arrange corn and nectarines cut sides down on grate. Grill, turning occasionally, until nectarines are charred, 3–5 minutes. Remove from heat. Continue grilling corn, turning occasionally, until charred, about 10 minutes more.
- In a large bowl, toss together greens, onion, tomato and avocado. Top with nectarines and steak. Drizzle with dressing and scatter with shaved Parmesan. Serve immediately with corn.
