Summer Orzo Salad

Ingredients

  • 8 oz. Schnucks orzo pasta
  • 2 tbsp. Schnucks olive oil
  • 2 tbsp. white balsamic vinegar or Schnucks apple cider vinegar
  • 1 tbsp. Schnucks honey
  • 2 nectarines, peeled and diced
  • 2 cups baby arugula
  • 1 cup crumbled feta cheese
  • 1 medium shallot, diced
  • 1 large avocado, diced
  • 1/4 cup fresh basil, chopped

Instructions

  1. Cook orzo according to package directions.
  2. In a large bowl, whisk together oil, vinegar and honey. Season with salt and pepper, if desired. Add remaining ingredients and toss to coat. Refrigerate, covered, 30 minutes or up to 5 days. Serve chilled.
