Summer Orzo Salad
This light and fresh orzo pasta salad is bursting with summery flavors, including juicy nectarines, peppery arugula and punchy feta cheese. It’s perfect as a vibrant side dish for a barbecue or a light lunch.

Ingredients
- 8 oz. Schnucks orzo pasta
- 2 tbsp. Schnucks olive oil
- 2 tbsp. white balsamic vinegar or Schnucks apple cider vinegar
- 1 tbsp. Schnucks honey
- 2 nectarines, peeled and diced
- 2 cups baby arugula
- 1 cup crumbled feta cheese
- 1 medium shallot, diced
- 1 large avocado, diced
- 1/4 cup fresh basil, chopped
Instructions
- Cook orzo according to package directions.
- In a large bowl, whisk together oil, vinegar and honey. Season with salt and pepper, if desired. Add remaining ingredients and toss to coat. Refrigerate, covered, 30 minutes or up to 5 days. Serve chilled.
