Ingredients

  • 2 pkg. (9 pk.) King’s Hawaiian® Original Hawaiian Sweet Pretzel Pre-Sliced Slider Buns
  • 10 tbsp. salted butter
  • 2 (16 oz.) Center Cut New York Strip Steaks
  • 1 tsp. cracked black pepper
  • 1 tsp. sea salt
  • 1 tbsp. olive oil
  • 1 pkg. french fries
  • 1.5 oz. arugula
  • 1 shallot
  • 1 red onion
  • 1 lb. bacon
  • 2 tbsp. red wine vinegar
  • 1 cup red wine
  • 1/3 cup granulated sugar
  • 1/2 cup Cognac
  • 1 tbsp. Cognac
  • 3 cups heavy cream
  • 2 tbsp. dijon mustard
  • 1 tbsp. fresh thyme

Instructions

  1. Spread 4 tablespoons of butter on the inside of the tops and bottoms of all 18 King's Hawaiian® Slider Buns. Toast on a griddle until golden brown.
  2. Season strip steaks and generously crust with black pepper. Sear in oil and finish with 4 tablespoons of butter. Cook until just under medium rare. Place on a wire rack to rest. Pour butter from pan over the steak.
  3. In the same pan the steaks were cooked in, add minced shallots and 1 tablespoon of butter. Cook shallots until soft and deglaze pan with half a cup of Cognac.
  4. Reduce heat by half and add 3 cups heavy cream and 1 tablespoon. minced thyme. Then reduce heat by 1/3.
  5. Stir in 2 tablespoons of Dijon mustard, 1 tablespoon cold butter, and 1 tablespoon of Cognac. Pour steak drippings into sauce and stir. Season with salt and pepper, keep warm.
  6. Dice bacon and cook until crispy. Remove from pan reserving fat. Dice red onion and caramelize in pan. Add 1/3 cup of sugar, 2 tablespoons of red wine vinegar and deglaze with 1 cup of red wine. Reduce by half and add bacon to mixture.
  7. Cook French Fries until golden brown.
  8. Thinly slice steak against the grain.
  9. Coat inside of top and bottom slider buns with jam. Top the bottom bun with arugula. Top with steak slices and then top with french fries. Then, cover with top bun.
  10. Serve with cognac cream for dunking.
