Spring Salad-Topped Quiche

Ingredients
- 1 (11 oz.) pkg. Schnucks spinach quiche
- 4 asparagus spears
- 3 radishes, thinly sliced
- 2 tbsp. Schnucks shaved Parmesan cheese
- 1 tbsp. Schnucks olive oil
- 1 tbsp. lemon juice
Instructions
- Prepare quiche according to package directions. Let cool 5–10 minutes.
- Using a vegetable peeler, shave asparagus lengthwise into ribbons and transfer to a medium bowl. Toss together with remaining ingredients and, if desired, season with salt and pepper. Spoon over quiche’s center and serve.
