Special K Breakfast Bars
Crispy, fruity and delightful, these breakfast bars made with Special K cereal are a quick breakfast or easy after school snack.

Ingredients
- 4 cups Special K Red Berries cereal
- 3 tbsp. dried cranberries
- 1/3 cup pure maple syrup
- 1/3 cup sunflower butter
- 1 1/4 cups white chocolate baking chips
- 1/2 tbsp. coconut oil
- 1/4 cup nonfat plain Greek yogurt (room temperature)
Instructions
- Line a 9x13-inch rimmed sheet pan with parchment paper. In a large mixing bowl, stir together cereal and cranberries.
- In a medium bowl, microwave syrup and sunflower butter until bubbling, 30–45 seconds. Pour over cereal mixture and stir to combine. Transfer to prepared sheet pan and press firmly into an even layer. Cover with plastic wrap and freeze until set, about 10 minutes.
- In a medium bowl, microwave white chocolate chips and oil in 30-second intervals until fully melted, about 5 minutes total. Stir in yogurt, then drizzle over cereal mixture, spreading evenly until mostly covered. Refrigerate, uncovered, until firm, about 10 minutes.
- Turn mixture out onto a cutting board and cut into 24 bars.
