Ingredients
- 1 tbsp. olive oil
- 1 lb. Verde 93% lean ground beef (optional)
- 1/2 medium onion, diced
- 1 small green bell pepper, diced
- 2 garlic cloves, minced
- 1 tbsp. Schnucks paprika
- 2 tsp. chili powder
- 2 tsp. cumin
- 2 (14.5 oz.) cans Schnucks petite diced tomatoes with green chilies
- 2 cups low-sodium beef broth
- 1 (15 oz.) can Full Circle black beans
- 1 (15.5 oz.) can Full Circle garbanzo beans
- 1 (15.5 oz) can Full Circle kidney beans
- 1 cup Schnucks frozen corn
- 1 tbsp. chopped cilantro, plus more for garnish
- 1/3 cup Schnucks shredded cheese
- 1 avocado, peeled & diced
Instructions
- In a medium skillet, heat oil over medium-high. Cook beef until browned, 5–6 minutes; drain. Stir in onion, green pepper and garlic; cook until fragrant, 2–3 minutes. Transfer to a slow cooker and stir in remaining ingredients. Cook on High 2–3 hours or on Low 6–8 hours. Serve topped with cheese and avocado and garnished with cilantro.
