Slow Cooker Jollof Rice With Sirloin

Ingredients
- 1 1/2 lb. sirloin steak, cut into bite-size pieces
- 1 1/2 tbsp. Schnucks less-sodium soy sauce
- 3 tbsp. Schnucks tomato paste
- 1 1/2 cups diced red bell pepper (about 1 1/2 peppers)
- 1 large yellow onion, chopped (about 2 cups)
- 3 tsp. minced garlic
- 1 1/2 tsp. Schnucks ground ginger
- 1 1/2 tsp. Schnucks cayenne pepper
- 1 1/2 tsp. Schnucks dried thyme
- 3 cups Schnucks long-grain white rice, rinsed
- 2 Schnucks bay leaves
- 1/4 cup Schnucks vegetable oil
- 4 cups beef broth
Instructions
- In a medium bowl, toss together steak and soy sauce. In a large slow cooker, stir together remaining ingredients and top with steak. Cook, covered, until steak’s internal temperature reaches 160 degrees, 2–2 1/2 hours on High or 4 hours on Low.
- Gently fluff with a fork to evenly combine steak and rice. Serve immediately.
