Skippy Confetti Breakfast Bars

Ingredients

  • 1/4 cup honey
  • 1/4 cup Skippy creamy peanut butter
  • 4 cups plain toasted oat cereal
  • 2 tbsp. confetti sprinkles
  • 1 1/4 cups white chocolate baking chips
  • 1/2 tbsp. coconut oil
  • 1/4 cup nonfat plain Greek yogurt, room temperature

Instructions

  1. Line a 9x13-inch rimmed sheet pan with parchment paper. In a medium bowl, microwave honey and peanut butter until bubbling, 30–45 seconds. Stir in cereal and sprinkles until well combined. Transfer to prepared sheet pan and press firmly into an even layer. Cover with plastic wrap and freeze until set, about 10 minutes.
  2. In a medium bowl, microwave white chocolate chips and oil in 30-second intervals until fully melted, about 5 minutes total. Stir in yogurt, then drizzle over cereal mixture, spreading evenly until mostly covered. Refrigerate, uncovered, until firm, about 10 minutes.
  3. Turn mixture out onto a cutting board and cut into 24 bars.
