Sausage and Potato Hash
This hearty and flavorful dish combines crispy sausage, tender potatoes, filling eggs and savory seasonings for a satisfying breakfast or brunch option.

Ingredients
- 2 tbsp. Schnucks olive oil
- 4 medium gold potatoes, diced
- 1/2 medium yellow onion, diced
- 1/2 green bell pepper, diced
- 1 lb. Schnucks Italian ground sausage
- 1/2 red bell pepper, diced
- 2 garlic cloves, minced
- 4 eggs
Instructions
- In a large skillet over medium-high heat, add oil and potatoes. Cook, stirring occasionally, about 7 minutes.
- Reduce heat to medium; add onion, sausage, bell peppers and garlic. Cook, covered but stirring frequently, until potatoes are tender and sausage is fully cooked, about 10 minutes.
- Using spatula, move hash to one side of skillet. Crack eggs into the empty half. Break yolks and cook, stirring gently, to preferred doneness. Season with salt and pepper, if desired. Stir eggs into hash and divide among four plates. Serve immediately.
