Ingredients
- 2 (8 oz.) pkgs. cilantro-lime ready rice
- 1 (15 oz.) pkg. tortilla bowls
- 1 Schnucks whole rotisserie chicken, shredded (about 24 ounces)
- 1 (1.25 oz.) packet Schnucks 30%-less-sodium taco seasoning mix
- 1/2 cup Schnucks shredded Mexican-style four-cheese blend
- 1 cup shredded lettuce
- 1/4 cup Schnucks mild salsa
- 1/4 cup Schnucks mild guacamole
- chopped fresh cilantro, for garnish
- jalapeño slices, for garnish
Instructions
- Prepare rice and 4 tortilla bowls according to package directions.
- In a mixing bowl, toss together chicken with taco mix until evenly coated. In each taco bowl, add a layer of rice, chicken, cheese, lettuce, salsa and guacamole. Garnish with cilantro and jalapeño.
Chef tip: Make your own cilantro lime rice! Cook 16 ounces Schnucks white rice according to package directions. Fluff with a fork, then gently fold in the zest and juice of 2 limes, 1/2 cup finely chopped fresh cilantro and 2 tablespoons Schnucks olive oil.
