Roasted Red Pepper Pasta
This vibrant pasta dish features noodles coated in a creamy, savory roasted red pepper sauce, perfectly paired with a sweet Italian sausage. Itβs the perfect decadent yet easy dinner.

Ingredients
- 1/2 (16 oz.) pkg. Schnucks penne rigate
- 1 tsp. Schnucks canola oil
- 10 oz. Schnucks sweet Italian sausage
- 1/2 medium yellow onion, diced
- 1 (16 oz.) jar roasted red pepper strips, drained
- 1 tsp. Schnucks garlic powder
- 1/2 tsp. smoked paprika
- 1/2 cup Schnucks 2% milk
- 1 tbsp. Schnucks nonfat plain Greek yogurt
- Fresh basil leaves, for garnish
Instructions
- Cook pasta according to package instructions. Drain.
- In a large skillet over medium heat, add oil and swirl to coat. Add sausage and cook until lightly browned, 3β5 minutes. Slice into 1/4-inch rounds and transfer to a plate.
- Add onion to skillet; cook until softened, about 2 minutes. Add roasted peppers, garlic powder and paprika. Cook 2β3 minutes more.
- Transfer mixture to a blender. Add milk and yogurt. Season with salt and black pepper, if desired. Blend until smooth, 1β3 minutes, then return to skillet. Add pasta and sausage; toss to coat. Serve immediately, garnished with basil.
