Roasted Red Pepper Pasta

Ingredients

  • 1/2 (16 oz.) pkg. Schnucks penne rigate
  • 1 tsp. Schnucks canola oil
  • 10 oz. Schnucks sweet Italian sausage
  • 1/2 medium yellow onion, diced
  • 1 (16 oz.) jar roasted red pepper strips, drained
  • 1 tsp. Schnucks garlic powder
  • 1/2 tsp. smoked paprika
  • 1/2 cup Schnucks 2% milk
  • 1 tbsp. Schnucks nonfat plain Greek yogurt
  • Fresh basil leaves, for garnish

Instructions

  1. Cook pasta according to package instructions. Drain.
  2. In a large skillet over medium heat, add oil and swirl to coat. Add sausage and cook until lightly browned, 3–5 minutes. Slice into 1/4-inch rounds and transfer to a plate.
  3. Add onion to skillet; cook until softened, about 2 minutes. Add roasted peppers, garlic powder and paprika. Cook 2–3 minutes more.
  4. Transfer mixture to a blender. Add milk and yogurt. Season with salt and black pepper, if desired. Blend until smooth, 1–3 minutes, then return to skillet. Add pasta and sausage; toss to coat. Serve immediately, garnished with basil.
