Roasted Artichokes
These Roasted Artichokes make for a flavorful, easy side dish to any meal. They blend lemon, garlic, fresh herbs and feta cheese for a zippy, fresh flavor.

Ingredients
- 3 artichokes
- 1 lemon, zested
- 3 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup Schnucks olive oil
- 1/3 cup crumbled feta cheese
Instructions
- Preheat oven to 400 degrees. Lightly grease a 9x13-inch baking dish.
- Slice 1 inch off top and stem ends of artichokes; brush cut surfaces with lemon juice. Using kitchen scissors, trim off pointed tops of leaves. Peel off rough leaves near the stems. Slice artichokes in half lengthwise; brush cut surfaces with lemon juice. Scoop out and discard the fuzzy centers (chokes).
- Arrange artichoke halves cut side up in prepared baking dish. Sprinkle with lemon zest, garlic and parsley. Drizzle with oil and, if desired, season with salt and pepper.
- Bake, covered with foil, 45 minutes. Sprinkle with feta, replace foil and continue baking until fork-tender, about 10 minutes.
