Pulled-Pork and Veggie Crazy-Dilla
This creative quesadilla is packed with savory pulled pork, cheese and a medley of vegetables, offering a hearty and flavorful twist on a classic. It combines whole grains, lean protein and veggies for all-day energy.

Ingredients
- 1 (6 oz.) pork loin, fat trimmed
- 1 tbsp. Schnucks canola oil, divided
- 1 (14.5 oz.) can Schnucks 41%-less-sodium chicken broth
- 1/3 cup Schnucks frozen whole-kernel corn
- 1/3 cup green bell pepper, chopped
- 1/3 cup white onion, chopped
- 2 8-inch Schnucks fajita-style whole-wheat tortillas
- 1/2 cup Schnucks shredded sharp cheddar cheese
- 6 cherry tomatoes, sliced (for eyes)
- 6 candy eyes
- 3 olives, sliced (for nose)
Instructions
- Rub pork with 1/2 tablespoon of oil and, if desired, season with salt and black pepper. Transfer to a slow cooker and pour broth around it. Cook, covered, on High until pork is tender and shreds easily with a fork, 4–5 hours.
- In a large skillet, heat remaining oil on medium-high. Add veggies; cook, stirring occasionally, until tender, 3–4 minutes. Transfer to a bowl.
- Drain and wipe skillet. Return to stovetop and reduce heat to medium. Working in batches as needed, add tortillas and divide cheese, pork and veggies among them. Fold tortillas over and cook until golden brown, 2–3 minutes per side. Cut into thirds and top each with 2 tomato slices and candy eyes, then with an olive slice for nose. Wrap in foil before adding to lunch box.
