Pork Chops with Polenta and Grilled Veggies

Ingredients

  • 4 cups Schnucks 33%-less-sodium chicken broth
  • 1 cup dried polenta or corn grits
  • 1/4 cup Schnucks grated Parmesan cheese
  • 1 tbsp. Schnucks butter
  • 3 tbsp. Schnucks canola oil, divided
  • 1 tbsp. minced garlic
  • 2 tsp. Schnucks Italian seasoning
  • 4 bone-in pork chops (about 24 oz.)
  • 1 large red onion, thickly sliced
  • 1 medium zucchini, sliced
  • 1 tbsp. balsamic vinegar

Instructions

  1. In a medium saucepan over high heat, bring broth to a boil. Gradually whisk in polenta, then reduce heat to low. Cook, stirring frequently, until creamy, about 20 minutes. Stir in Parmesan and butter. Remove from heat.
  2. Preheat an outdoor grill to medium-high. In a small bowl, stir together 2 tablespoons oil, the garlic and Italian seasoning; rub mixture all over chops. Grill until internal temperature reaches 145 degrees, 5–7 minutes per side. Remove from heat.
  3. Brush onion and zucchini with remaining oil and grill until browned, 3–4 minutes per side. Transfer to a medium bowl and toss together with balsamic vinegar. Serve with polenta and chops.
