Pork Chops with Polenta and Grilled Veggies

Ingredients
- 4 cups Schnucks 33%-less-sodium chicken broth
- 1 cup dried polenta or corn grits
- 1/4 cup Schnucks grated Parmesan cheese
- 1 tbsp. Schnucks butter
- 3 tbsp. Schnucks canola oil, divided
- 1 tbsp. minced garlic
- 2 tsp. Schnucks Italian seasoning
- 4 bone-in pork chops (about 24 oz.)
- 1 large red onion, thickly sliced
- 1 medium zucchini, sliced
- 1 tbsp. balsamic vinegar
Instructions
- In a medium saucepan over high heat, bring broth to a boil. Gradually whisk in polenta, then reduce heat to low. Cook, stirring frequently, until creamy, about 20 minutes. Stir in Parmesan and butter. Remove from heat.
- Preheat an outdoor grill to medium-high. In a small bowl, stir together 2 tablespoons oil, the garlic and Italian seasoning; rub mixture all over chops. Grill until internal temperature reaches 145 degrees, 5–7 minutes per side. Remove from heat.
- Brush onion and zucchini with remaining oil and grill until browned, 3–4 minutes per side. Transfer to a medium bowl and toss together with balsamic vinegar. Serve with polenta and chops.
