Plum Crisp with Greek Frozen Yogurt

Although you don’t see plums in dessert very often, they are a great addition for a subtle sweetness. Plus, plums are low in fat and an excellent source of Vitamin C and A.

Plum Crisp with Greek Frozen Yogurt

Ingredients

  • 3 cups Oikos low-fat vanilla Greek yogurt
  • 1 tbsp. honey
  • 2 tbsp. lemon juice
  • 1/2 tsp. ground ginger
  • 1/4 tsp. salt
  • 1 1/2 lbs. plums
  • 2 tsp. granulated sugar
  • 1/2 cup regular rolled oats
  • 1/3 cup packed brown sugar
  • 1/4 cup all-purpose flour
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 1/3 cup butter, cut up
  • 1 tbsp. chopped pecans

Instructions

  1. In a stand mixer or large food processor, combine Greek yogurt, honey, lemon juice, ginger and salt. Process until smooth, scraping down edges of bowl with a rubber spatula, as needed. Transfer to a 2-quart rectangular baking dish and cover. Freeze 3 hours, stirring gently and re-covering every 30 minutes.
  2. Meanwhile, preheat oven to 375 degrees. Remove pits; cut each plum into 8 wedges and place in a 2-quart square baking dish. Toss with granulated sugar.
  3. In a medium bowl, combine oats, brown sugar, flour, cinnamon and nutmeg. With a pastry cutter, cut in butter until mixture resembles coarse crumbs. Stir in pecans and sprinkle over plums. Bake 30–35 minutes, or until fruit is tender and topping is golden.
  4. Serve warm, topped with Greek frozen yogurt.
