Peanut Chickpea Bowl

Ingredients
- 1 tbsp. vegetable oil, divided
- 4 cups kale, stems removed, leaves massaged and chopped
- 2 medium carrots, peeled and chopped
- 1 tsp. jarred minced garlic
- 1 can (15.5 oz.) Schnucks garbanzo beans (chickpeas), rinsed and drained
- 1/2 cup Full Circle peanut satay sauce, plus more for garnish
- 2 cups Schnucks brown rice, cooked
- 2 avocados, peeled, pitted and sliced
Instructions
- In a skillet over medium heat, add half of the oil, the kale, carrot and garlic. Cook until kale has wilted, about 3 minutes. Season with salt and pepper, if desired, then transfer to a bowl.
- Stir remaining oil, the garbanzo beans (chickpeas) and peanut sauce into skillet. Reduce heat to low; cook, stirring occasionally, until heated through, about 5 minutes.
- Serve hot rice topped with kale mixture, chickpea-peanut sauce and avocado slices.
