Parmesan-Crusted Tilapia With Roasted Zucchini

Parmesan-Crusted Tilapia With Roasted Zucchini

Ingredients

  • 2 medium zucchini, sliced into 1/2-inch-thick half-moons
  • 2 tbsp. Schnucks canola oil, divided
  • 1 tsp. Schnucks garlic powder, divided
  • 1 tsp. Schnucks paprika, divided
  • 4 tilapia fillets (about 3.5 oz. each)
  • 1/2 cup Schnucks grated Parmesan cheese

Instructions

  1. Preheat oven to 400 degrees. Line a sheet pan with parchment paper.
  2. In a medium bowl, toss zucchini with 1/2 tablespoon oil, 1/4 teaspoon garlic powder and 1/4 teaspoon paprika. Spread on half of prepared sheet pan, then arrange tilapia on other half.
  3. Brush tilapia with remaining oil and sprinkle with remaining garlic powder and paprika. Scatter Parmesan over both tilapia and zucchini.
  4. Bake until tilapia flakes easily with a fork and zucchini is tender, 12–15 minutes. Serve immediately.

Chef Tip: You can swap tilapia for other lean proteins like chicken, cod or tofu. Just adjust the cook time as needed to keep that crispy, golden Parmesan crust perfect every time.
