Parmesan-Bacon Roasted Leeks and Radishes

Ingredients

  • 4 large leeks, halved lengthwise and thoroughly rinsed
  • 1 cup sliced red radish
  • 1 tbsp. Schnucks olive oil
  • 1/2 tsp. Schnucks Italian seasoning mix
  • 1/8 tsp. Schnucks black pepper
  • 1/4 cup Schnucks unsalted butter, diced
  • 6 slices Schnucks thick-cut smoked applewood bacon, diced
  • 1/4 cup Schnucks shredded Parmesan cheese

Instructions

  1. Preheat oven to 400 degrees with a rack in middle position. Line a sheet pan with foil and coat with cooking spray. Arrange leeks, cut side down, in a single layer. Scatter with radish slices and drizzle with oil. Top with Italian seasoning, pepper, butter and bacon.
  2. Roast until leeks are fork-tender and bacon is crisp, about 25 minutes. Remove from oven and sprinkle with Parmesan. Continue roasting until Parmesan is melted, about 5 minutes. Serve immediately.
