Parmesan-Bacon Roasted Leeks and Radishes
This Parmesan-Bacon Roasted Leeks and Radishes recipe combines crispy bacon, tender leeks, bright radishes and Parmesan cheese for a salty, satisfying side dish.

Ingredients
- 4 large leeks, halved lengthwise and thoroughly rinsed
- 1 cup sliced red radish
- 1 tbsp. Schnucks olive oil
- 1/2 tsp. Schnucks Italian seasoning mix
- 1/8 tsp. Schnucks black pepper
- 1/4 cup Schnucks unsalted butter, diced
- 6 slices Schnucks thick-cut smoked applewood bacon, diced
- 1/4 cup Schnucks shredded Parmesan cheese
Instructions
- Preheat oven to 400 degrees with a rack in middle position. Line a sheet pan with foil and coat with cooking spray. Arrange leeks, cut side down, in a single layer. Scatter with radish slices and drizzle with oil. Top with Italian seasoning, pepper, butter and bacon.
- Roast until leeks are fork-tender and bacon is crisp, about 25 minutes. Remove from oven and sprinkle with Parmesan. Continue roasting until Parmesan is melted, about 5 minutes. Serve immediately.
