One-Pot Creamy Chickpeas

Ingredients
- 1 tbsp. Schnucks canola oil
- 1/3 cup roasted red bell pepper, cut into strips
- 1 tbsp. Schnucks tomato paste
- 2 cloves garlic, minced (about 2 tsp.)
- 2 tsp. Schnucks Italian seasoning
- 2 (15 oz.) cans Schnucks chickpeas (garbanzo beans), drained and rinsed
- 2/3 cup Schnucks lite coconut milk
- 1/2 (15 oz.) loaf Schnucks French bread, torn into pieces
- fresh basil leaves, for garnish
Instructions
- In a large pan, heat oil over medium. Add roasted red bell pepper, tomato paste, garlic and Italian seasoning; cook, stirring, about 30 seconds.
- Stir in chickpeas and coconut milk. Simmer, stirring occasionally, until sauce is slightly thickened, 15-20 minutes. Garnish with basil and serve warm with bread.
