One-Pot Creamy Chickpeas

Ingredients

  • 1 tbsp. Schnucks canola oil
  • 1/3 cup roasted red bell pepper, cut into strips
  • 1 tbsp. Schnucks tomato paste
  • 2 cloves garlic, minced (about 2 tsp.)
  • 2 tsp. Schnucks Italian seasoning
  • 2 (15 oz.) cans Schnucks chickpeas (garbanzo beans), drained and rinsed
  • 2/3 cup Schnucks lite coconut milk
  • 1/2 (15 oz.) loaf Schnucks French bread, torn into pieces
  • fresh basil leaves, for garnish

Instructions

  1. In a large pan, heat oil over medium. Add roasted red bell pepper, tomato paste, garlic and Italian seasoning; cook, stirring, about 30 seconds.
  2. Stir in chickpeas and coconut milk. Simmer, stirring occasionally, until sauce is slightly thickened, 15-20 minutes. Garnish with basil and serve warm with bread.
