Ingredients
- 1 tbsp. olive oil
- 1 small white onion, diced (about 1/2 cup)
- 2 tsp. jarred minced garlic
- 1 can (14.5 oz.) Schnucks diced tomatoes
- 2 cups Schnucks vegetable broth
- 1 pkg. (8 oz.) chickpea spaghetti pasta
- 1 tbsp. Schnucks Italian seasoning
- 1/3 tsp. Schnucks dried basil, for garnish
- grated Parmesan cheese, for garnish
Instructions
- In a large pot over medium heat, add oil and onion; cook, stirring, until translucent, 3–5 minutes. Stir in garlic; cook until fragrant, about 1 minute. Add tomato; cook, stirring occasionally, 5 minutes more.
- Stir in broth, pasta and Italian seasoning; cover and bring to a boil. Reduce heat to medium-low; simmer until pasta is tender, about 10 minutes. Serve immediately, garnished with basil and Parmesan.
