No-Bake Energy Balls

Ingredients

  • 1/3 cup dried apricot halves
  • 1 tbsp. honey
  • 1/3 cup Full Circle almond butter
  • 1/4 cup ground flaxseed
  • 1/8 tsp. salt
  • 2/3 cup Schnucks rolled oats
  • 1/2 cup shredded sweetened coconut

Instructions

  1. Place apricots, honey, almond butter, flaxseed and salt in the bowl of a food processor. Pulse 5 times, then process the mixture for about 20 seconds
  2. Scrape down the sides of the bowl and add oats. Pulse 5 times, then process for another 20 seconds.
  3. Use a tablespoon measure to scoop mixture; shape each scoop into a ball and roll in shredded coconut. Refrigerate until ready to eat.
