No-Bake Energy Balls
These no-bake bites are perfect for breakfast on-the-go.

Ingredients
- 1/3 cup dried apricot halves
- 1 tbsp. honey
- 1/3 cup Full Circle almond butter
- 1/4 cup ground flaxseed
- 1/8 tsp. salt
- 2/3 cup Schnucks rolled oats
- 1/2 cup shredded sweetened coconut
Instructions
- Place apricots, honey, almond butter, flaxseed and salt in the bowl of a food processor. Pulse 5 times, then process the mixture for about 20 seconds
- Scrape down the sides of the bowl and add oats. Pulse 5 times, then process for another 20 seconds.
- Use a tablespoon measure to scoop mixture; shape each scoop into a ball and roll in shredded coconut. Refrigerate until ready to eat.
