Mushroom Grilled Cheese

Ingredients
- 1 tbsp. Schnucks olive oil
- 1/2 medium yellow onion, thinly sliced
- 8 oz. Schnucks baby bella mushrooms, sliced
- 3 tbsp. unsalted butter, softened
- 8 slices Vienna bread
- 8 slices Schnucks swiss cheese
- 1/3 cup fresh spinach
Instructions
- In a large skillet over medium-high heat, add olive oil, onions, spinach and mushrooms. Cook, stirring constantly, for 5–6 minutes, until browned and softened. Set aside.
- Butter one side of the bread slices. On the unbuttered side of four slices, place a slice of cheese, a quarter of the mushroom and spinach mixture, remaining cheese and the other slice of bread.
- Place sandwiches in the same skillet over medium-low heat. Cook for approximately 6–7 minutes per side until bread is golden brown and cheese is melted. Serve immediately.
