Mushroom Grilled Cheese

Ingredients

  • 1 tbsp. Schnucks olive oil
  • 1/2 medium yellow onion, thinly sliced
  • 8 oz. Schnucks baby bella mushrooms, sliced
  • 3 tbsp. unsalted butter, softened
  • 8 slices Vienna bread
  • 8 slices Schnucks swiss cheese
  • 1/3 cup fresh spinach

Instructions

  1. In a large skillet over medium-high heat, add olive oil, onions, spinach and mushrooms. Cook, stirring constantly, for 5–6 minutes, until browned and softened. Set aside.
  2. Butter one side of the bread slices. On the unbuttered side of four slices, place a slice of cheese, a quarter of the mushroom and spinach mixture, remaining cheese and the other slice of bread.
  3. Place sandwiches in the same skillet over medium-low heat. Cook for approximately 6–7 minutes per side until bread is golden brown and cheese is melted. Serve immediately.
