Monster Smash Pumpkin Cookies
These fully-loaded cookies are the perfect fall treat packed with real pumpkin puree, warm spices and a sweet, creaming filling. They’re free of nuts, gluten and dairy, making them perfect for those with food sensitivities.

Ingredients
- 1/4 cup Schnucks unsweetened applesauce
- 1/2 cup Full Circle coconut oil
- 1/4 cup Schnucks packed light brown sugar
- 1 tsp. Schnucks pure vanilla extract
- 2 tbsp. unsweetened oat milk
- 3/4 cup gluten-free flour
- 3 tbsp. Schnucks cocoa powder
- 1/4 tsp. Schnucks baking soda
- 1/8 tsp. salt
- 1/3 cup canned Schnucks pumpkin purée
- 1/2 cup Schnucks shortening
- 1/2 tsp. Schnucks pumpkin pie spice
- 3 cups Schnucks powdered sugar
- candy eyes, for decoration
Instructions
- Preheat oven to 350 degrees. Line a sheet pan with parchment paper.
- In a medium bowl, whisk together applesauce, coconut oil, brown sugar, vanilla and oat milk. In another bowl, stir together flour, cocoa powder, baking soda and salt. Stir in applesauce mixture to form a soft dough. Refrigerate, covered, 10–15 minutes.
- Scoop out 1-tablespoon balls of dough and flatten with the bottom of a cup into a 1/4-inch thickness. Transfer to prepared sheet pan; bake until edges are set, about 10 minutes. Let cool completely.
- In a small bowl, stir together pumpkin purée, shortening and pumpkin pie spice. Stir in powdered sugar, a little at a time, until smooth and thick. Spread onto half the cookies, then top with remaining cookies and, if desired, decorate with candy eyes.
