Mini Pecan Pies for Two

Ingredients
- 2 tbsp. Schnucks flour
- 1 tbsp. cold Schnucks unsalted butter, cut into small pieces
- 1 tsp. cold water
- 1 pinch salt
- 1 tbsp. Schnucks light corn syrup
- 2 tsp. Schnucks packed light brown sugar
- 1 tsp. Schnucks liquid egg substitute, beaten
- 1/8 tsp. Schnucks pure vanilla extract
- 2 tbsp. Schnucks chopped pecans
Instructions
- Preheat oven to 350 degrees. In a medium bowl, stir together flour, butter, water and salt to form a dough. Press into 2 cups of a muffin pan and refrigerate 5 minutes.
- Bake crust 5 minutes. Meanwhile, wipe out bowl and stir in corn syrup, brown sugar, 1 teaspoon of beaten egg substitute, vanilla and pecans until combined. Spoon into part-baked dough. Bake until set and golden, about 17 minutes. Let cool slightly before serving.
Chef tip: Make this dish in the air fryer! Spoon dough into 2 silicone muffin cups and partially bake in the air fryer at 300 degrees for 5 minutes. Spoon the filling into partially baked crusts and air fry until set and golden, 10–12 minutes.
