Mini Meat Loaves With Green Beans
A classic comfort food reinvented, these mini meat loaves are perfectly portioned and served with a side of fresh green beans for a complete and easy dinner.

Ingredients
- 1/2 cup Schnucks chickpeas (garbanzo beans), drained and rinsed
- 1 lb. Schnucks 80%-lean ground beef
- 1 large Schnucks egg
- 1/4 cup yellow onion, diced
- 1 tbsp. Schnucks apple cider
- 1 tbsp. Schnucks tomato paste
- 2 tbsp. Schnucks ketchup
- 1 /2 tsp. Schnucks packed light brown sugar
- 1 tsp. Schnucks canola oil
- 1 (12 oz.) bag frozen Schnucks green beans
Instructions
- Preheat oven to 375 degrees. Lightly coat a sheet pan with cooking spray.
- In a large bowl, mash chickpeas with a fork until smooth. Add ground beef, egg, onion, apple cider and tomato paste. Season with salt and pepper, if desired. Mix together with your hands until well combined. Divide into four portions (about 3/4 cup each), shape into mini loaves and transfer to prepared sheet pan.
- In a small bowl, stir together ketchup, mustard and brown sugar, then spoon evenly over loaves. Bake until internal temperature reaches 165 degrees, 20-25 minutes.
- Meanwhile, heat oil in a medium pan over medium-high. Stir in frozen green beans; cook, stirring occasionally, until vibrant green, 6-8 minutes. Serve warm with meal loaves.
