Microwave Pasta in a Mug
This comforting dish uses Barilla Protein+ Penne as its base, which provides 10g of protein per serving from lentils, garbanzo beans and peas. Combined with marinara, spices, veggies and Parmesan, it’s perfect when you need a satisfying meal in a hurry.

Ingredients
- 1 cup uncooked Barilla Protein+ Penne, divided
- 1 1/2 cups water, divided
- 2 tbsp. diced mushrooms (about 1 medium baby bella)
- 3 tbsp. diced green bell pepper (about 1/4 medium)
- 1/4 cup Schnucks marinara pasta sauce
- 1 tsp. Schnucks Italian seasoning, divided
- 1 tsp. Schnucks grated Parmesan cheese, divided
Instructions
- Divide pasta and water among 2 microwave-safe mugs. Microwave on High 3 minutes, stir, then continue microwaving in 10-second intervals until pasta is tender. Drain.
- Stir in sauce, bell pepper and mushrooms. Microwave until vegetables are cooked through, 1–2 minutes more. Stir in Italian seasoning and top with Parmesan. Let cool about 1 minute.
