Mediterranean Salmon Salad
This Mediterranean Salmon Salad is light and refreshing, combining nutritious salmon, crisp greens, crunchy cucumbers, juicy tomatoes and tangy feta cheese, all drizzled in a citrusy dressing.

Ingredients
- 3 tbsp. Schnucks olive oil, divided
- 4 (4 oz.) salmon fillets
- 2 tbsp. Schnucks lemon juice
- 1 tbsp. chopped fresh parsley
- 1 tsp. Schnucks minced garlic
- 1 tsp. Kosher salt
- 1/2 tsp. Schnucks black pepper
- 1/2 tsp. dried oregano
- 4 cups roughly chopped romaine lettuce
- 1 small cucumber, thinly sliced
- 2 avocados, sliced
- 1 cup grape tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/3 cup crumbled feta cheese
Instructions
- In a large skillet, heat 1 tbsp. oil over medium-high. Cook salmon 4 minutes; reduce heat to medium, turn fillets over and cook to desired doneness, 4–5 minutes more.
- In a blender, add remaining oil, the lemon juice, parsley, garlic, salt, pepper and oregano. Blend until well combined.
- Divide remaining ingredients among four bowls, top with salmon and drizzle with dressing. Serve immediately.
