Mediterranean Quinoa Chickpea Salad

Ingredients
- 1/4 cup olive oil
- 1 lemon, zested and juiced (about 3 tbsp. juice)
- 2 tbsp. jarred minced garlic
- 2 cups Full Circle quinoa, cooked
- 1 can (15.5 oz.) Schnucks garbanzo beans (chickpeas), drained and rinsed
- 1/2 cup baby carrots, diced
- 1 medium cucumber, diced
- 1/2 medium red onion, diced
- 2 Roma tomatoes, diced
- 1/4 cup crumbled feta cheese, for garnish
- chopped fresh Italian parsley, for garnish
Instructions
- In a large bowl, whisk together oil, lemon zest and juice, and garlic. Season with salt and pepper, if desired. Add cooked quinoa, garbanzo beans (chickpeas), carrot, cucumber, red onion and tomato; stir until combined. Refrigerate, covered, at least 30 minutes. Serve garnished with feta and parsley.
