Matzo Lasagna
Reinvent a family favorite with this kosher-friendly lasagna that swaps traditional pasta for soft sheets of matzo. Layered with marinara, creamy ricotta and melty mozzarella, it’s a comforting, one-dish dinner perfect for Passover hosting.

Ingredients
- 1 (15 oz.) container Schnucks part-skim ricotta cheese
- 1 large Schnucks egg
- 1 tsp. Schnucks Italian seasoning
- 4 sheets matzo
- 1 (23 oz.) jar Schnucks marinara pasta sauce
- 1 cup Schnucks low-moisture part-skim shredded mozzarella cheese
- 1/2 cup Schnucks grated Parmesan cheese
Instructions
- Heat oven to 350 degrees. Coat an 8x8-inch baking dish with cooking spray.
- In a medium bowl, stir together ricotta, egg and Italian seasoning until smooth. Season with salt and pepper, if desired.
- Carefully and briefly, run warm water over matzo sheets. (They should be soft but still hold structure.) Drain immediately.
- Spread a thin layer of marinara, about 1/4 cup, in prepared baking dish. Add one matzo sheet, one-fourth of ricotta mixture, a tablespoon marinara and one-fourth of cheeses. Repeat three times.
- Bake, covered loosely with foil, twenty minutes. Remove foil and continue baking until cheeses are melted and bubbly, 8–10 minutes more. Let rest ten minutes before serving.
