Mashed Carrots


  • 2 lb. carrots, peeled & cut into chunks
  • 3 cloves garlic
  • 6 tbsp. Schnucks unsalted butter
  • 2 tbsp. pure maple syrup
  • 1/2 tsp. kosher salt
  • 1/2 tsp. Schnucks black pepper
  • 2 tsp. fresh thyme leaves, divided


  1. In a large pot over medium-high heat, add carrots, garlic and enough water to cover. Bring to a boil; reduce heat to medium-low and simmer, covered, until carrots are very tender, 15–20 minutes. Drain.
  2. Return carrots and garlic to pot and add butter, maple syrup, salt and pepper. Mash until smooth. Stir in 1 tsp. thyme, then transfer to a serving bowl and sprinkle with remaining thyme.
