Mashed Carrots

Ingredients
- 2 lb. carrots, peeled & cut into chunks
- 3 cloves garlic
- 6 tbsp. Schnucks unsalted butter
- 2 tbsp. pure maple syrup
- 1/2 tsp. kosher salt
- 1/2 tsp. Schnucks black pepper
- 2 tsp. fresh thyme leaves, divided
Instructions
- In a large pot over medium-high heat, add carrots, garlic and enough water to cover. Bring to a boil; reduce heat to medium-low and simmer, covered, until carrots are very tender, 15–20 minutes. Drain.
- Return carrots and garlic to pot and add butter, maple syrup, salt and pepper. Mash until smooth. Stir in 1 tsp. thyme, then transfer to a serving bowl and sprinkle with remaining thyme.
