Loaded Sweet Potato Fries

Ingredients

  • 4 cups frozen sweet potato fries
  • 2 cups Schnucks garbanzo beans (chickpeas), drained and rinsed
  • 2 cups Schnucks broccoli slaw
  • 1 avocado, diced
  • 4 tbsp. Schnucks poppyseed salad dressing
  • 1 cup crumbled feta

Instructions

  1. Preheat oven to 400 degrees. Spread garbanzo beans on a parchment paper-lined sheet pan. Roast 15 minutes, then remove from oven and let cool slightly.
  2. Bake sweet potato fries according to package directions.
  3. Divide fries among 4 bowls. Top with roasted garbanzo beans, broccoli slaw and avocado. Drizzle with dressing and sprinkle with feta. Serve immediately.
