Kid-Friendly Air Fryer Pork Nuggets

Pork nuggets are a quick, flavorful dinner option that’s perfect for busy school nights. They’re versatile, easy to freeze and can be reheated in the air fryer, making them a fun, hassle-free meal for the whole family.

Kid-Friendly Air Fryer Pork Nuggets

Ingredients

  • 16 oz. pork tenderloin
  • 1/2 cup buttermilk
  • 1 egg
  • 1 tsp. paprika
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt, plus an extra pinch (divided)
  • 1/4 tsp. black pepper, plus an extra pinch (divided)
  • 1 1/2 cups panko breadcrumbs
  • 1/2 cup traditional breadcrumbs*
  • 2 tbsp. Italian seasoning
  • 2 tbsp. olive oil

Instructions

  1. Place pork tenderloin on a cutting board. Cut into small bite-sized pieces (about 1-inch square); transfer pieces into a large bowl. Add buttermilk, egg, paprika, garlic powder, 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Mix well to combine. Cover bowl and set aside to marinate for 1 hour or, for best results, marinate overnight in the refrigerator.
  2. Preheat oven to 400°F or an air fryer to 375°F.
  3. Once pork has marinated, place panko breadcrumbs, traditional breadcrumbs, Italian seasoning and olive oil in a large plastic freezer bag. Seal the bag shut; shake mixture well to combine.
  4. Place 1/3 of the pork pieces into the bag and reseal. Shake thoroughly (this is a great job for little helpers!) until pork pieces are fully coated.
  5. Open the bag, and by hand carefully transfer pork pieces one at a time onto a parchment-lined baking sheet or into an air fryer basket. Repeat this step with remaining pork pieces until all pieces are coated.
  6. Bake pork nuggets in preheated oven for 20 minutes OR air fry for 20 minutes. Cook pork until internal temperature reaches 145°F, followed by a 3-minute rest.
  7. Serve pork nuggets with your favorite dipping sauce or your kid’s favorite condiment, if desired.

Prep Ahead & Freeze

Follow the directions through step 5, placing the coated, uncooked pork pieces onto a baking sheet. Do not bake or air fry. Instead, cover the baking sheet with plastic wrap and place in the freezer. Freeze for 1 hour. Once pork pieces are fully frozen, transfer them into a large plastic freezer bag. Label bag clearly with the name of its contents (e.g., raw pork nuggets) and the date. Freeze until you are ready to cook them.
To cook, transfer raw pork nuggets directly from the freezer bag into the air fryer basket. Air fry at 350°F for 25 minutes. Cook pork nuggets until internal temperature reaches 145°F, followed by a 3-minute rest. Serve with your favorite dipping sauce!


*Ingredient Note: Breadcrumbs

Using traditional breadcrumbs plus panko breadcrumbs will lead to more fully coated nuggets and a better texture; however, traditional breadcrumbs are not essential for this recipe. If you choose to omit the traditional breadcrumbs, increase panko breadcrumbs to 2 cups total.
