Kale Chicken Caesar Salad with Crispy Roasted Chickpeas

Kale Chicken Caesar Salad with Crispy Roasted Chickpeas

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup Schnucks nonfat plain Greek yogurt
  • 2 tbsp. lemon juice
  • 1 tsp. Schnucks Dijon mustard
  • 1 tbsp. Schnucks extra-virgin olive oil
  • 1 tsp. Worcestershire sauce
  • 1/2 tsp. black pepper
  • 1 garlic clove, minced
  • 3/4 cup shredded Sartori Parmesan cheese, divided
  • 2 cups chopped fresh kale
  • 2 cups chopped romaine lettuce
  • 1 1/2 cups Garlic Herb Crispy Roasted Chickpeas (see recipe notes below)

Instructions

  1. Preheat oven to 375 degrees. Line a sheet pan with foil and coat with cooking spray. Arrange chicken on pan; season with salt and pepper, if desired.
  2. Bake chicken until internal temperature reaches 165 degrees, 15–20 minutes. Remove from oven; let rest 10 minutes before slicing.
  3. In a blender or food processor, add yogurt, lemon juice, mustard, oil, Worcestershire, pepper and garlic. Blend until combined, about 1 minute. Add half of the Parmesan; pulse until combined, about 30 seconds. Season with salt and pepper, if desired. (Covered and refrigerated, dressing keeps up to 3 days.)
  4. In a large salad bowl, add kale, lettuce and remaining Parmesan. Toss to combine. Top with sliced chicken and Crispy Roasted Chickpeas. Drizzle with dressing and divide among four bowls. Serve immediately.
