Kale Butternut Squash Breakfast Hash

Ingredients
- 2 tbsp. olive oil
- 1 small shallot, thinly sliced
- 1 tsp. minced garlic
- 2 tsp. Spice World slammin' Moroccan seasoning
- 2 bags (9 oz.) frozen Steam'Ables butternut squash
- 2 cups kale, stemmed and shredded
- 4 large eggs
- 2 tbsp. feta crumbles
Instructions
- In a medium sauté pan, heat olive oil on medium-high; add shallot, garlic and seasoning blend. Stir for 2 minutes or until golden and fragrant.
- Add frozen squash and season with salt and pepper if desired. Cook 10 minutes, stirring occasionally until fork tender.
- Add kale and cook 2 minutes, stirring until wilted. Using a wide, thin metal spatula, make 4 spaces in the vegetables and crack 1 egg per space; cover and allow to cook until whites are done but yolks are runny, about 5 minutes.
- Top with fresh feta and salt and pepper if desired. Serve immediately.
