Hummus-Crusted Chicken With Veggies
This flavorful chicken dish features a unique hummus crust that locks in moisture and adds a savory twist, complemented by roasted vegetables for a complete (and quick!) meal.

Ingredients
- 1 cup Schnucks classic hummus
- 4 Schnucks boneless, skinless chicken breasts (about 4 oz. each)
- 2 red bell peppers, sliced
- 2 zucchini, sliced
- 2 tsp. Schnucks olive oil
- 1 tsp. Schnucks paprika
Instructions
- Preheat oven to 400 degrees. Line a sheet pan with parchment paper.
- Spread 1/4 cup hummus over each chicken breast. In a medium bowl, toss bell pepper and zucchini with oil and paprika. Transfer chicken and vegetables to prepared sheet pan.
- Bake until chickenโs internal temperature reaches 165 degrees and vegetables are tender, 20โ25 minutes. Serve immediately.
