Hummus-Crusted Chicken With Veggies

Ingredients

  • 1 cup Schnucks classic hummus
  • 4 Schnucks boneless, skinless chicken breasts (about 4 oz. each)
  • 2 red bell peppers, sliced
  • 2 zucchini, sliced
  • 2 tsp. Schnucks olive oil
  • 1 tsp. Schnucks paprika

Instructions

  1. Preheat oven to 400 degrees. Line a sheet pan with parchment paper.
  2. Spread 1/4 cup hummus over each chicken breast. In a medium bowl, toss bell pepper and zucchini with oil and paprika. Transfer chicken and vegetables to prepared sheet pan.
  3. Bake until chicken’s internal temperature reaches 165 degrees and vegetables are tender, 20–25 minutes. Serve immediately.
