Hummus-Crusted Chicken With Veggies

Ingredients

  • 1 cup Schnucks classic hummus
  • 4 Schnucks boneless, skinless chicken breasts (about 4 oz. each)
  • 2 red bell peppers, sliced
  • 2 zucchini, sliced
  • 2 tsp. Schnucks olive oil
  • 1 tsp. Schnucks paprika

Instructions

  1. Preheat oven to 400 degrees. Line a sheet pan with parchment paper.
  2. Spread 1/4 cup hummus over each chicken breast. In a medium bowl, toss bell pepper and zucchini with oil and paprika. Transfer chicken and vegetables to prepared sheet pan.
  3. Bake until chickenโ€™s internal temperature reaches 165 degrees and vegetables are tender, 20โ€“25 minutes. Serve immediately.
