Honey Sriracha Glazed Meatballs

Ingredients

  • 2 1/2 cups unsalted chicken stock
  • 1 cup brown rice
  • 1 tbsp. minced yellow onion
  • 12 frozen turkey meatballs
  • 1 tbsp. Schnucks less-sodium soy sauce
  • 2 tbsp. sriracha sauce
  • 1 lime, juiced (about 2tbsp.)
  • 1 tbsp. Schnucks honey
  • 1 tsp. ground ginger
  • 3 garlic cloves, minced
  • 1/2 tsp. sesame oil
  • 1 tsp. Schnucks cornstarch
  • 1 (10 oz.) bag freshly frozen broccoli florets, steamed
  • 2 green onions, sliced, for garnish

Instructions

  1. In a medium pot, bring stock, rice and onion to a boil over medium-high heat. Cover, reduce heat and simmer until liquid is absorbed, 40–45 minutes. Remove from heat and let stand 10 minutes.
  2. Meanwhile, preheat oven to 350 degrees. Spread meatballs on a foil-lined sheet pan; bake 20 minutes (or per package instructions).
  3. In a large skillet over medium heat, stir together soy sauce, sriracha, lime juice, honey, ginger, garlic and sesame oil until combined; cook until bubbling, 5–6 minutes. In a bowl, stir together cornstarch and 2 tablespoons of cold water, then stir into skillet. Reduce heat to low; simmer, stirring occasionally, until thickened, 2–3 minutes. Add meatballs and toss to coat. Prepare broccoli according to instructions.
  4. Serve over rice, garnished with green onion.
