Holiday Sweet Potato Pie

Holiday Sweet Potato Pie

Ingredients

  • 1/2 cup Bear Naked honey almond granola
  • 3 sweet potatoes
  • 1/2 cup brown sugar
  • 1/3 cup butter
  • 1/2 tsp. vanilla
  • 1/4 tsp. cinnamon
  • 1 cup mini marshmallows

Instructions

  1. Peel and dice sweet potatoes. Boil for 15 minutes then remove from water.
  2. Add sugar, butter, vanilla and cinnamon to cooked sweet potatoes. Mix and mash potato mixture.
  3. Place potato mixture into a grease 9”x 9” baking dish. Smooth out top.
  4. Spread mini marshmallows across top of sweet potato filling. Sprinkle granola on top of marshmallows.
  5. Place in oven at 375° and bake for 25 minutes. Serve and enjoy warm.
