Halloumi & Avocado Quinoa Salad

Ingredients
- 3 cups cooked quinoa, cooled
- 1 large avocado, diced
- 2 red bell peppers, diced
- 1 1/2 cups cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup chopped fresh Italian flat-leaf parsley
- 3 tbsp. lemon juice
- 2 tbsp. Schnucks olive oil
- 1/2 tsp. ground black pepper
- 4 tbsp. Schnucks vegetable oil
- 8 oz. halloumi cheese, cut into 1/4 in. thick slices
Instructions
- In a large bowl, toss together cooked quinoa, avocado, red bell peppers, tomatoes, onion, parsley, lemon juice, olive oil and black pepper. Cover and refrigerate 1 hour to marinate.
- Heat vegetable oil in a medium nonstick pan over medium heat. With a kitchen towel, pat dry slices of halloumi.
- Fry slices in oil until golden on both sides, about 3β5 minutes each side. Remove from oil with a metal spatula and place on paper-lined plate to drain excess oil. Season with salt (if desired).
- Serve salad immediately topped with halloumi cheese slices.
