Grilled Pesto Summer Squash
Tender summer squash is grilled and drizzled with vibrant pesto, creating a flavorful and simple side dish perfect for any summer barbecue or weeknight dinner.

Ingredients
- 4 medium yellow squashes
- 2 tbsp. Schnucks canola oil
- 1/2 cup Full Circle organic pesto
- fresh basil
Instructions
- Preheat an outdoor grill to medium-high and oil grate. Halve 4 medium yellow squashes lengthwise, brush cut sides with 2 tablespoons Schnucks canola oil and, if desired, season with salt and pepper.
- Grill squash cut sides down until tender, 3–4 minutes. Remove from grill and let cool 5 minutes.
- Cut into 1/2-inch-thick moons and arrange on a platter. Drizzle with 1/2 cup Full Circle organic pesto and garnish with fresh basil.
