Grilled Pesto Summer Squash

Grilled Pesto Summer Squash

Ingredients

  • 4 medium yellow squashes
  • 2 tbsp. Schnucks canola oil
  • 1/2 cup Full Circle organic pesto
  • fresh basil

Instructions

  1. Preheat an outdoor grill to medium-high and oil grate. Halve 4 medium yellow squashes lengthwise, brush cut sides with 2 tablespoons Schnucks canola oil and, if desired, season with salt and pepper.
  2. Grill squash cut sides down until tender, 3–4 minutes. Remove from grill and let cool 5 minutes.
  3. Cut into 1/2-inch-thick moons and arrange on a platter. Drizzle with 1/2 cup Full Circle organic pesto and garnish with fresh basil.
