Grilled Corn and Quinoa Salad
Smoky grilled corn and nutty quinoa come together in this vibrant and wholesome salad, excellent as a light vegetarian main or a flavorful side for summer cookouts.

Ingredients
- 4 ears fresh corn, husked and grilled
- 2 cups Full Circle organic quinoa, cooked
- 2 cups packed baby spinach, chopped
- 2 cups halved cherry tomatoes
- 4 oz. fresh mozzarella cheese, diced
- 1/4 cup fresh basil, chopped
- 1/4 cup Schnucks balsamic salad dressing
Instructions
- On a cutting board, cut kernels off grilled cobs and transfer to a large bowl. Add remaining ingredients and toss until combined. Season with salt and pepper, if desired.
- Refrigerate, covered, at least 30 minutes or up to 24 hours. Serve cold. Salad keeps up to 5 days refrigerated in an airtight container.
