Grilled Chicken Kabobs with Pineapple Marinade

Ingredients
- 1 (20 oz.) can Schnucks pineapple chunks in juice, drained with juice reserved
- 2 tbsp. Schnucks olive oil
- 1 tbsp. Schnucks fajita seasoning
- 1 lb. Schnucks natural fresh boneless, skinless chicken breast, cut into 1-inch cubes
- 1 red onion, cut into 1-inch chunks
- 1 green bell pepper, cut into 1-inch pieces
- 8 bamboo skewers, soaked in water at least 30 minutes
Instructions
- In a bowl, whisk together reserved pineapple juice, oil and fajita seasoning. Add chicken and toss to coat. Refrigerate, covered, at least 30 minutes or, for more flavor, up to 2 hours.
- Preheat an outdoor grill to medium-high and oil grate. Discarding marinade, alternately thread chicken, pineapple chunks, red onion and bell pepper onto skewers.
- Grill, turning occasionally, until chicken’s internal temperature reaches 165 degrees, 10–12 minutes. Serve immediately.
