Grilled Chicken Kabobs with Pineapple

These juicy chicken kabobs are marinated in a sweet and tangy pineapple juice. They’re perfect for serving as an appetizer at your summer parties or a light weeknight dinner.

Grilled Chicken Kabobs with Pineapple

Ingredients

  • 1 (20 oz.) can Schnucks pineapple chunks in juice, drained with juice reserved
  • 2 tbsp. Schnucks olive oil
  • 1 tbsp. Schnucks fajita seasoning
  • 1 lb. Schnucks natural fresh boneless, skinless chicken breast, cut into 1-inch cubes
  • 1 red onion, cut into 1-inch chunks
  • 1 green bell pepper, cut into 1-inch pieces
  • 8 bamboo skewers, soaked in water at least 30 minutes

Instructions

  1. In a bowl, whisk together reserved pineapple juice, oil and fajita seasoning. Add chicken and toss to coat. Refrigerate, covered, at least 30 minutes or, for more flavor, up to 2 hours.
  2. Preheat an outdoor grill to medium-high and oil grate. Discarding marinade, alternately thread chicken, pineapple chunks, red onion and bell pepper onto skewers.
  3. Grill, turning occasionally, until chicken’s internal temperature reaches 165 degrees, 10–12 minutes. Serve immediately.
