Ingredients
- 1 egg
- 1 tbsp. lemon juice
- 1 tsp. lemon zest
- 1/4 cup Schnucks panko breadcrumbs
- 2 tbsp. onion powder
- 1 tbsp. garlic powder
- 1 tsp. dried oregano
- 1 tsp. dried marjoram
- 1 tsp. dried ground rosemary
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/2 lb. lean ground beef or ground turkey
- 1/2 lb. ground lamb
- tzatziki sauce (see recipe notes)
Instructions
- Preheat oven to 450 degrees. Combine all ingredients except the meat and sauce in a large bowl. Add ground meat and gently mix until just combined (do not over mix). Form into 1-inch meatballs and arrange on a prepared sheet pan.
- Bake about 15 minutes or until browned and internal temperature reaches 165 degrees.
- Meanwhile, start to prepare the tzatziki sauce by wrapping the shredded cucumber in a clean kitchen towel (or a few paper towels) and gently squeezing out excess moisture. Add to a medium bowl along with remaining sauce ingredients. Stir until combined. Cover and refrigerate until ready to serve.
- Serve meatballs topped with tzatziki sauce.

- 1 garlic clove, finely grated
