Garlicky Roasted Cabbage

Ingredients
- 1 medium head red cabbage
- 2 tbsp. Schnucks canola oil
- 1 tbsp. Schnucks minced garlic
- 1/2 lemon, zested and juiced (about 1 tbsp. juice)
- 1 tbsp. Schnucks unsalted butter
- 1/4 cup Schnucks panko breadcrumbs
- 3 tbsp. chopped fresh parsley, for garnish
Instructions
- Preheat oven to 375 degrees with a rack in middle position. Line a sheet pan with foil and coat with cooking spray.
- Peel off and discard cabbage’s outer leaves. On a cutting board, slice cabbage vertically into four 1-inch-thick steaks. Arrange on prepared sheet pan.
- In a small bowl, whisk together oil, garlic, lemon zest and lemon juice. Drizzle over cabbage and season with salt and pepper, if desired.
- In a medium bowl, melt butter in a microwave. Stir in panko and parsley until well combined, then sprinkle over cabbage. Bake until cabbage is fork-tender and panko is golden brown, 35–40 minutes. Serve immediately.
