Fried Rice

Ingredients

  • 2 tbsp. butter, divided
  • 1/2 medium yellow onion, thinly sliced
  • 1 (12 oz.) bag Schnucks frozen mixed vegetables, thawed
  • 1 tsp. minced garlic
  • 1/2 tsp. Schnucks ground ginger
  • 1 large eggs, lightly beaten
  • 3 cups cooked brown rice
  • 1/4 cup water
  • 1/4 cup low sodium soy sauce
  • 1 tsp. hot sauce (more or less to taste)
  • 2 green onions, sliced

Instructions

  1. Heat a large skillet over medium heat. Add 1 tablespoon of butter and onions, then cook for 3 minutes until fragrant. Add vegetables, garlic and ginger, then cook for 1 minute more.
  2. Push the vegetables to one side of the pan, add remaining butter and pour in the eggs. Cook, stirring frequently, until just scrambled. Stir to mix with vegetables.
  3. Add the rice, soy and hot sauce; stir fry for 2–3 minutes until warmed through. Top with green onions and serve immediately.
