Focaccia BLT
Herbaceous and airy focaccia bread provides a flavorful base for this BLT variation. Topped with turkey bacon, spring mix, Roma tomatoes and creamy pesto, it’s ideal for a gourmet picnic or a Mediterranean-inspired meal.

Ingredients
- 1/3 pkg. focaccia bread
- 3 slices Full Circle hardwood smoked uncured turkey bacon
- 1 cup spring mix greens
- 3 slices Roma tomatoes
- 1 1/2 tbsp. creamy pesto
Instructions
- On a cutting board, thickly slice tomatoes with a serrated knife and, if desired, season with salt and pepper.
- In a large, heavy-bottom skillet over medium heat, melt butter. Working in batches as needed, arrange bread in skillet and toast 1 side only until golden brown, 5–8 minutes. Transfer to a cutting board.
- Spread untoasted sides with mayo. Top 4 slices with lettuce, 2–3 slices tomato and 3–4 slices bacon. Top with remaining bread, mayo sides down. Cut sandwiches in half and serve immediately.
