Fettuccine with Spinach and Blue Cheese Sauce

Ingredients
- 12 oz. fettuccine pasta
- 1 pkg. fresh spinach
- 1 tbsp. Schnucks unsalted butter
- 1 pkg. refrigerated thinly-sliced prosciutto, cut into 1/4-inch wide strips
- 1/4 cup shallots, minced
- 8 oz. Schnucks Select blue cheese or Gorgonzola, crumbled or thinly sliced
- 1/4 cup Schnucks milk, half-and-half or whipping cream
- 1/4 tsp. freshly ground black pepper
Instructions
- Heat covered 5-quart saucepan of salted water to boiling over high heat. Add pasta and cook as label directs, stirring occasionally. Place spinach in colander. Drain pasta over spinach in colander to wilt spinach. Return pasta mixture to same saucepan.
- Meanwhile, in 10" skillet, melt butter over medium-high heat. Add prosciutto and shallots and cook 2 minutes, stirring frequently. Reduce heat to low. Add cheese, milk and pepper and stir until sauce is smooth. Pour sauce over pasta mixture; toss until well combined.
