Eggplant Pizza

Ingredients
- 1 large eggplant
- 1/2 cup Schnucks pizza sauce
- 1 cup Schnucks shredded mozzarella cheese
- 12 slices pepperoni
Instructions
- Preheat oven to 400 degrees. Cut eggplant into 1/2-inch slices and place on a foil-lined baking sheet.
- Top each eggplant slice with 2 tablespoons sauce, 1/4 cup cheese and 3 slices pepperoni.
- Add to oven and bake until eggplant is tender, about 10-12 minutes.
