Egg-cellent Tortilla Bake

This easy and versatile bake combines eggs, cheese, tortillas, prosciutto and pico de gallo, making it a filling and flavorful meal for any time of day. You can even swap in different veggies, cheeses or meats to suit your preferences!

Egg-cellent Tortilla Bake

Ingredients

  • 4 Schnucks large eggs
  • 1/2 cup Schnucks milk
  • 8 Schnucks 6-inch flour tortillas
  • 1 cup Schnucks low-moisture part-skim shredded mozzarella cheese
  • 1 cup Schnucks Short Cuts pico de gallo
  • 4 slices prosciutto, torn into pieces

Instructions

  1. Preheat oven to 375 degrees and lightly grease an 8x8-inch baking dish.
  2. In a medium bowl, whisk together eggs and milk. Season with salt and pepper, if desired.
  3. Layer 4 tortillas in prepared baking dish. Top with half the cheese, pico de gallo and prosciutto. Add egg mixture, then top with remaining tortillas, cheese, pico and prosciutto.
  4. Bake until eggs have set and jiggle slightly in center, 20–25 minutes. Serve immediately.
