Egg-cellent Tortilla Bake
This easy and versatile bake combines eggs, cheese, tortillas, prosciutto and pico de gallo, making it a filling and flavorful meal for any time of day. You can even swap in different veggies, cheeses or meats to suit your preferences!

Ingredients
- 4 Schnucks large eggs
- 1/2 cup Schnucks milk
- 8 Schnucks 6-inch flour tortillas
- 1 cup Schnucks low-moisture part-skim shredded mozzarella cheese
- 1 cup Schnucks Short Cuts pico de gallo
- 4 slices prosciutto, torn into pieces
Instructions
- Preheat oven to 375 degrees and lightly grease an 8x8-inch baking dish.
- In a medium bowl, whisk together eggs and milk. Season with salt and pepper, if desired.
- Layer 4 tortillas in prepared baking dish. Top with half the cheese, pico de gallo and prosciutto. Add egg mixture, then top with remaining tortillas, cheese, pico and prosciutto.
- Bake until eggs have set and jiggle slightly in center, 20–25 minutes. Serve immediately.
