Easy Greek Chicken Bowls

Ingredients

  • 1 1/2 cups Full Circle organic quinoa
  • 1 cup cucumber, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1 cup Just Bare roasted chicken breast bites
  • 1/2 cup Schnucks classic hummus
  • 1/4 cup thinly sliced red onion
  • 1 tbsp. fresh dill, chopped
  • 1 tbsp. lemon juice

Instructions

  1. Prepare quinoa and warm chicken according to package directions.
  2. Divide quinoa, cucumber, tomato, chicken, hummus and red onion among two bowls. Sprinkle with dill and lemon juice.
