Ingredients
- 1 1/2 cups Full Circle organic quinoa
- 1 cup cucumber, chopped
- 1/2 cup cherry tomatoes, halved
- 1 cup Just Bare roasted chicken breast bites
- 1/2 cup Schnucks classic hummus
- 1/4 cup thinly sliced red onion
- 1 tbsp. fresh dill, chopped
- 1 tbsp. lemon juice
Instructions
- Prepare quinoa and warm chicken according to package directions.
- Divide quinoa, cucumber, tomato, chicken, hummus and red onion among two bowls. Sprinkle with dill and lemon juice.
