Crispy Rice Ghosts
These adorable and easy-to-make ghosts are the perfect recipe for kids in the kitchen! Made from a classic crispy rice cereal, marshmallows and dairy-free chocolate chips, they’re nut- and dairy-free, perfect for all little monsters!

Ingredients
- 3 tbsp. coconut oil
- 1 (10.5 oz.) bag Schnucks mini marshmallows
- 1 tsp. Schnucks pure vanilla extract
- 6 cups Food Club crisp-rice cereal
- 1 cup dairy-free white baking chips
- 32 dairy-free rice milk morsels for “eyes”
Instructions
- Line a sheet pan with parchment paper. In a large pot over low heat, melt butter. Stir in marshmallows until smooth, then stir in vanilla and cereal until well coated. Let cool slightly, about 30 minutes. Shape mixture into 16 small “ghosts” and arrange on prepared sheet pan.
- In a bowl, microwave white chocolate chips in 15-second intervals, stirring until smooth, about 1 minute total. Drizzle over ghosts, then add chocolate chips for “eyes”. Let set completely before serving, about 10 minutes.
